White Arnold Palmer from Wise Cocktails

I stumbled across this book at the library...  a guide to crafting and brewing tea-based beverages.  That is a topic I have not pondered before.  I love tea!  I love cocktails!  The combination is perfect.  This book has many simple drinks to whip up when I'm lazy but looking for something fancy.  I love the idea of blending tea with fruit and brewing in room temperature water as instructed in this recipe.  It gives a nice light interesting drink that is great alone or mixed with vodka.  Arnold Palmers are one of my favorite non-alcoholic drink and this take on a cocktail version has become one of my favorite cocktails.

Makes 1 Cocktail

TEA BASE
1 teaspoon white tea leaves
1/2 teaspoon rose petals
1/2 teaspoon dried strawberries
1 pinch dried lemon peel

COCKTAIL
4 1/2 ounces brewed tea base
1 1/2 ounces vodka
1 tablespoon agave nectar

GARNISH
1 slice lemon

1. In a cup, place 6 ounces of room temperature water.  You will only use 4 1/2 oz for the tea base in this recipe, so don't worry if there is extra left over.  Feel free to sip, save or discard!

2. In a tea linen or tea ball, combine all of the ingredients for the tea base. Brew in the room temperature water for 10 minutes, agitating from time to time.  Remove the sachet/ball.

3. In a shaker, combine 4 1/2 oz of the tea base, the vodka, and agave nectar. Dry-shake until the agave dissolves. Pour into a glass over ice. Gently swirl to chill. Garnish with the lemon slice.

Notes: White tea is complimented by clarifying and energizing lemon peel. Strawberries and rose petals add a boost of vitamin C.

*For a strawberry punch:  Add 2 fresh strawberries to the shaker and muddle. Then add the tea base, vodka, and agave, and dry-shake.  Serve over ice.

2017 Dixie Classic Fair Blue Ribbon Trail Mix in a Jar

2017 Dixie Classic Fair Trail Mix in a Jar Blue Ribbon
My first year entering the Dixie Classic fair didn't go so well.  My Northern tastes didn't seem to fit in here in the South I realized after I entered several of my favorite recipes in many categories.  The one and only winner I had was for a category that spoke to me...
oh how I love trail mix and definitely love my jars!  I have so many favorite trail mixes so it was tough to pick one!  In the end I went with a new creation, using some of my favorite roasted nut recipes along with a new favorite candy I discovered at LGA airport of all places...
chocolate covered freeze dried strawberries!  I tried making them on my own but that didn't go well.  Luckily I found some in the holiday section at Lidl.

Red Berry Risotto

Fresh berries are a treat, but sometimes I need to do something different...  this fits that craving!  This is a rich, sweet, hearty treat.  I've never had anything like this and it's one of my favorite all time recipes.  It is definitely worth the work of all that stirring!

2 cups water
3 1/2 cups water
1/2 cup irish oatmeal
1 cup arborio rice
1/2 cup heavy cream
1 vanilla bean, split lengthwise and scraped
1/2 cup sugar
1 cup raspberries

1 cup strawberries, rinsed, hulled and quartered

1. In a small saucepan, bring 2 cups water and oatmeal to a boil. Reduce heat and simmer, stirring occasionally, for 25 minutes. Remove from heat, and set aside.

2. In a medium saucepan, combine rice, heavy cream, vanilla bean, and sugar. Add enough water to just cover the rice. Cook over medium heat, stirring constantly with a wooden spoon until the water is absorbed. Repeat the process, adding about 1 cup water at a time and stirring until it is absorbed; continue until the rice is just al dente, about 40 minutes. You will need to add about 3 1/2 cups water in total before the rice is cooked.

3. Remove rice from heat, and stir in the cooked oatmeal. Add raspberries, and stir to combine. Stir in strawberries, and continue to stir until the berries have turned the risotto slightly pink, 1 to 2 minutes. Serve immediately

    Jen's Kitchen...

is the smallest kitchen ever.  We used to watch those decorating shows that said they were doing small kitchens and then could see that 4 of my kitchens would fit in their "small kitchens".
Regardless of size, the kitchen is busy cranking out good things.  Most is natural/organic but that doesn't mean it's always healthy!
