Great Greens Smoothie

This is a blast from the past that I read in a Self Magazine diet plan.  I do like a green drink, and this one is an easy option.  The addition of orange juice is nice; I use fresh or just throw in fresh orange slices.  When I'm out of protein powder I like recipes like this that help fill me up with simple add ins, like flax seeds.

Great Greens Smoothie
Self Magazine, April 2011

1 1/2 cups soy milk
1 cup spinach
1/2 banana
2 1/2 tablespoons flax seed
1/4 cup orange juice
1 teaspoon vanilla extract

Blend until smooth.

​Note: To make bigger, use 2 cups soy milk and 1 full banana.

Banana Chocolate Shake

This recipe came into my life from an awesome coworker that attended these healthy cooking classes at a local health food store.  She mentioned this delicious smoothie and I had her write it down on a post it for me that I've kept for years. 

Finally today I am typing it up as I had a panic moment where I needed this but couldn't find my post it note!..  crisis averted and chocolate fix is complete as this was in my belly today.

​I've replaced the water with coconut water and boosted it with protein powder and it's still great.  I blend the batch and split into 2 smoothie cups, storing half in the fridge, as it tastes just as good the next day.
Banana Chocolate Shake

​2 cups water
2 tablespoons almond butter
1 tablespoon honey
1 tablespoon cacao
1/4 teaspoon almond extract
1/4 teaspoon vanilla extract
1 sprinkle cinnamon
1/4 cup walnuts
3 bananas, frozen

​Combine all ingredients in blender and blend until smooth.

Peanut Butter Banana Bread

​I love bananas but tend to buy too many for me to eat before they turn soft....  which is not a problem since I don't waste.  It's a reason to make BANANA BREAD!  This one from the Penzey's Spice catalog is a great twist with adding peanut butter.  I've made it without the baking spice and subbing in a little more cinnamon or some allspice.

Penzey's Spices

3 ripe bananas, peeled and sliced
2 eggs
1/3 cup plain or vanilla yogurt
1/2 cup creamy peanut butter
3 tablespoons butter, melted
1/2 cup sugar
1/2 cup brown sugar, packed
1/4 cup flax seeds, ground
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1 teaspoon Penzey's Baking Spice
1 1/2 cups flour

​1. Preheat the oven to 350.  Spray a 9" x 5" loaf pan with non-stick spray and set aside.

2. In a large mixing bowl, combine the bananas, eggs, yogurt, peanut butter and melted butter.  Beat at edium speed until well blended.  Add the sugars and flax seed, baking soda, cinnamon and baking spice, reduce to low speed and mix well.  Add hte flour and beat until blended.  

3. Pour into the loaf pan and bake at 350 for 65-75 minutes.  Let cool 30 minutes in the pan before serving.

I love a banana cake.  It's a great use for the overripe bananas I put in the freezer that I don't want to go to waste.  If you do end up using frozen bananas here thaw first and drain off any water.  I used part fresh and part frozen with fine results. 

This type of powdered sugar frosting is not my favorite but it's easy and does the job.  I'm, taking suggestions for new frostings in my life.  I usually love a Swiss Meringue but don't always love buying that much butter!

This cake is what I ended up using for my piecaken...  more to come on that later!
Gram's Banana Cake
​Penzey's Spices

CAKE
2 1/2 cups sugar
1 cup butter
4 eggs
1 cup sour cream
2 teaspoons baking soda
3 cups all-purpose flour
1 tablespoon pure vanilla extract
2 1/2 cups ripe bananas, mashed

1. Preheat the oven to 350.  Grease and flour 3 9" cake pans and set aside. 

2. Mash the bananas and place in a measuring cup.  Cream the butter and sugar together until well mixed.  Add the eggs and beat well.  Mix in the sour cream.  In a separate bowl, sift together the flour and baking soda.  Add to creamed mixture and beat well. Add the mashed bananas and vanilla and mix well.

3. Divide evenly among the prepared cake pans.  Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.  Cool a few minutes and remove from pans.  Cool completely before frosting.

FROSTING
5 cups powdered sugar
1/2 cup cocoa powder
1/2 cup butter, softened
2-4 tablespoons brewed black coffee

Sift the powdered sugar and cocoa together into a large bowl.  Add the softened butter and mix on very low speed until they are incorporated.  Add the coffee starting with 2 tablespoons and mix until it reaches your desired spreading consistency.​

​I ended up adding too much coffee and added Xanthan gum to thicken it back up.  Again, I am not a fan of powdered sugar/random liquid based frostings!...  help.

    Jen's Kitchen...

    is the smallest kitchen ever.  We used to watch those decorating shows that said they were doing small kitchens and then could see that 4 of my kitchens would fit in their "small kitchens".
    Regardless of size, the kitchen is busy cranking out good things.  Most is natural/organic but that doesn't mean it's always healthy!
